The color is light gold, very shiny, the foam gradually disappears and strings of very fine bubbles rise in the flute.
The nose reveals scents of dried white flowers and hawthorn. There are hazelnuts, roasted almonds and notes of very ripe yellow fruits (fresh apricot, dried apricot). A small touch of lemon chutney is added.
The attack on the palate is tonic. Candied citrus fruits and lemon zest predominate. We find the dried fruits, and the finish, very fresh, lets the nuts express themselves.
This Champagne, both ripe and fresh, will be drunk as an aperitif, but it will go well with fish such as trout with almonds, as well as Oyster with hazelnut flavors.
